Baked Potato Salad
Makes 6-8 serving
Ingredients:
- 8 cups Redskin Potatoes, chopped into 1 1/2 inch pieces
- 2 cups Sour Cream
- 1 cup shredded cheddar cheese
- 6 pieces of bacon, cooked up and chopped into pieces
- 6 Green onions, chopped into small pieces
- OPTIONAL: 1 Tablespoon Mayonnaise
- Large pot for boiling potatoes
- Large mixing bowl
- Wooden Spoon
- Colander
Instructions:
Fill pot halfway with water and bring to a boil while chopping up the potatoes and drop the potatoes in the boiling water
Boil the potatoes in the water for 10-12 minutes, or until the potatoes are thoroughly cooked
Remove the pot filled with the potatoes and pour into a colander into order to strain out the water
Let the potatoes cool and then add the sour cream, cheddar cheese, bacon, green onion and mayo (if preferred) and stir together until mixed.
Eat right away or chill in the fridge for later
